The long knife that you can see in this photo is called Oroshi hocho, they are extremely long and highly specialized knives used in Japan to fillet tuna and other large fish. The oroshi hocho is the longer blade with a blade length of 150 cm (60 inches) in addition to a 30 cm (12 inch) handle, and can fillet a tuna in a single cut, although usually two to three people are needed to handle the knife and the tuna. The flexible blade is curved to the shape of the spine to minimize the amount of meat remaining on the tuna chassis. Source: Wikipedia

Very "bloody" processing...I like how you used the color to bring focus to the photo. I get a sense of the grime from that sepia you put over the rest of it, too.

I think this is one of my favorite shots you have ever taken! I love how the sepia gives it that "old time" feel but the use of selective colors keeps your eye focused on the subject. Superb!

I've always been fascinated by the knives in Japan, especially the ones for the fishes. I often think about that fish that you have to cut at the extremely good place, with an extremely good knife, or it could kill the one who eats it! Fugu it isn't ? Really nice shot! I like the tones, it give a very special atmosphere!
